A Bright, Lemony Chickpea-and-Tomato Skillet for the Whole Table

A Bright, Lemony Chickpea-and-Tomato Skillet for the Whole Table

A satisfying dinner does not have to be expensive or complicated. This colorful skillet uses pantry staples, cooks in about 20 minutes, and works with rice, toast, or warm flatbread. It is especially helpful on nights when the refrigerator looks almost empty.

For four servings, gather two cans of chickpeas, one pint of cherry tomatoes or a 14-ounce can of diced tomatoes, three cloves of garlic, two tablespoons olive oil, one lemon, half a teaspoon of dried oregano, and a handful of spinach if you have it. Keep salt, pepper, and a little water nearby.

Drain and rinse the chickpeas. Warm the oil in a large skillet over medium heat, add the garlic, and cook briefly until fragrant. Add the tomatoes and oregano and cook for five to seven minutes until the tomatoes soften. Stir in the chickpeas and a splash of water, then simmer for another five minutes. Add spinach until wilted. Finish with lemon zest, a squeeze of juice, and salt and pepper to taste.

Serve over cooked rice or with bread to soak up the juices. For a heartier version, add leftover chicken; for a creamier finish, sprinkle with feta if your budget allows. Leftovers keep refrigerated for three to four days. Cooking from what we have is one of the simplest ways to save money without giving up a good family meal.
