Homemade Apple Cinnamon Birthday Breakfast Rolls

Sharing our family with yours — one beautifully imperfect day at a time.

Make 12 soft apple cinnamon rolls for a birthday morning or a cozy weekend. Prep and rising: about 1 hour 40 minutes. Bake: 25–30 minutes at 350°F.

Dough ingredients

3½ cups all-purpose flour plus extra as needed; 2¼ teaspoons active dry yeast; ¾ cup warm milk (105–110°F); ¼ cup sugar; ¼ cup melted butter; 1 egg; ½ teaspoon salt.

Filling ingredients

2 peeled and finely diced medium apples; ⅓ cup packed brown sugar; 2 teaspoons cinnamon; 3 tablespoons softened butter.

Glaze ingredients

1 cup powdered sugar; 1–2 tablespoons milk; ½ teaspoon vanilla.

Step 1: Activate yeast

Mix warm milk, sugar and yeast. Rest 5–10 minutes until foamy.

Step 2: Make dough

Mix in butter, egg, salt and flour. Knead 6–8 minutes until smooth, adding a little flour if needed.

Step 3: First rise

Cover in a greased bowl and rise about 60 minutes until doubled.

Step 4: Fill

Roll dough to a 12-by-16-inch rectangle. Spread butter, sprinkle brown sugar and cinnamon and scatter apples. Roll tightly from the long side.

Step 5: Cut

Cut 12 rolls, place in a greased 9-by-13-inch pan, cover and rise another 20–30 minutes until puffy.

Step 6: Bake

Bake at 350°F for 25–30 minutes until golden brown and cooked through.

Step 7: Glaze

Whisk powdered sugar, milk and vanilla and drizzle over warm rolls.

Make-ahead and leftovers

Cover shaped rolls and refrigerate overnight, then let rise until puffy before baking. Refrigerate leftovers within two hours and enjoy within 3–4 days.
