It's Taco Tuesday, and sometimes the easiest dinner is the one everybody gets to build their own way. These sheet-pan nachos bring all the fun of taco night without a stack of individual plates to assemble.
Prep: 15 minutes · Cook: 12–15 minutes · Serves: 4–6
Ingredients
- 1 pound ground beef or ground turkey
- 1 packet taco seasoning and water as directed
- 1 large bag sturdy tortilla chips (about 10–12 ounces)
- 2 cups shredded cheddar or Mexican-blend cheese
- 1 can black beans (15 ounces), drained and rinsed
- 1 cup corn, drained or thawed
- Optional toppings: diced tomatoes, lettuce, avocado, sour cream, salsa, sliced olives and cilantro
Directions
- Heat the oven to 400°F. Line a large rimmed sheet pan with parchment paper.
- Brown the ground beef or turkey in a skillet over medium heat until fully cooked, breaking it into small pieces. Drain excess fat. Add taco seasoning and the package-directed water; simmer until thickened. Cook ground turkey to 165°F.
- Spread half the tortilla chips on the pan. Scatter over half the meat, beans, corn and cheese.
- Add the remaining chips, meat, beans, corn and cheese in a second layer so every bite gets some toppings.
- Bake for 8–10 minutes, until the cheese is melted and everything is hot. Keep an eye on the chips so they don't burn.
- Set the pan on the table and let everyone add their own fresh toppings. Serve immediately.
Family tip
For picky eaters, reserve a small section with just chips and cheese. For little ones, serve age-appropriate portions and supervise eating; crunchy chips may not be suitable for very young children.
Nothing fancy, just a colorful dinner that makes a regular Tuesday feel like a little party.
